It is a tangy, and spicy potato curry. Soft boiled potatoes simmered in a tomato-onion base, thinned down to a gravy.

Ingredients of Aloo Sabzi

2 Nos Potato (Aloo)
2 Tbsp Mustard Oil
0.5 Tsp Mustard Seeds (Rai)
0.5 Tsp Cumin Powder
0.25 Tsp Fenugreek (Methi) Seeds
1 Pinch Asafoetida (Hing)
0.5 Tsp Red Chilli Powder
0.25 Tsp Turmeric Powder (Haldi)
0.25 Tsp Coriander (Dhania) Powder
0.5 Tsp Dry Fenugreek Leaves (Kasuri Methi)
1 Nos Green Chilli
1 Nos Tomato
1 Inch Ginger
1.5 Cup Water

How to make Aloo Sabzi

Step 1: Wash and pressure cook the potato for 10-15 minutes;
Step 2: Peel and roughly dice them into chunks;
Step 3: Grind tomato and ginger into a smooth paste using water in a blender and keep it aside;
Step 4: Now heat oil in a kadhai and add mustard seeds, fenugreek seeds, cumin, and asafoetida and fry for few seconds;
Step 5: Add the tomato paste and fry till oil separates from the masala;
Step 6: Add turmeric powder, red chilli powder, coriander powder and boiled potato and mix it well;
Step 7: Add water, salt, kasuri methi, green chilli, coriander leaves, mix it well and allow the curry to simmer over low heat till it thickens a bit;
Step 8: Serve hot.
