It is a Kerala dish made with fermented rice batter. It is prepared in an appa kal or appa chetti which is a bowl shaped. So when you make appam the center is a little thick and the edges are thin.

Ingredients of Appam

0.75 Cup Sona Masuri Rice (Dosa Rice)
0.25 Cup Grated Coconut
0.5 Tsp Sugar
0.5 Tsp Salt
1 Pinch Baking Soda
0.5 Cup Water

How to make Appam

Step 1: Soak rice in water for 4-5 hours;
Step 2: Grind soaked rice along with coconut;
Step 3: Now take 2 tbsp of prepared batter and pour over pan along with water, making sure the flame is off;
Step 4: Mix it well, making sure the batter combines well with water;
Step 5: Now turn on the stove on medium flame and keep stirring;
Step 6: Transfer the prepared cooked batter into appam batter and mix it well making sure there are no lumps;
Step 7: Now cover and ferment in warm place for 8 hours;
Step 8: Add in sugar, salt and baking soda and mix it well;
Step 9: Heat appam pan over medium flame and pour a ladle full of batter into the pan and immediately twirl the pan to spread the batter in a circle motion;
Step 10: Further cover and simmer for about 2 minutes or until the edges turn golden brown and gets cooked completely;
Step 11: Carefully remove the appam from the pan and serve hot
