It’s a simple recipe and can be made with limited ingredients. The texture of brinjal along with the flavours of spices, make a great dish.

Ingredients of Brinjal Curry

250 Gms Brinjal (Baingan / Eggplant)
2 Tbsp Cooking Oil
0.25 Tsp Mustard Seeds (Yellow)
0.25 Tsp Cumin Seeds (Jeera)
1 Sprigs Curry Leaves
2 Nos Onion
1 Nos Green Chilli
1 Nos Tomato
1 Tsp Ginger Garlic Paste
0.5 Tsp Red Chilli Powder
1 Pinch Turmeric Powder (Haldi)
0.5 Tsp Salt
0.5 Tsp Garam Masala
2 Tbsp Coriander (Dhania) Leaves

How to make Brinjal Curry

Step 1: Wash and cut all the vegetables;
Step 2: Keep the brinjal immersed in a bowl of water with 0.25 tsp salt;
Step 3: Heat oil in a pan and add mustard seeds and cumin seeds and fry them for few seconds;
Step 4: Add curry leaves, onion, green chilli and fry till onion turns golden;
Step 5: Add ginger garlic paste and saute till th raw smell goes away;
Step 6: Add tomato, salt, mix it well and cover and cook for 2-3 minutes;
Step 7: Now add chilli powder, turmeric powder, garam masala and saute till the masala leaves oil;
Step 8: Drain off the water of the chopped brinjals and add them in a pan, mix it well and cook for 2-3 minutes;
Step 9: Pour half cup water and cover and cook brinjals for 4-5 minutes;
Step 10: Garnish it with coriander leaves and serve hot.
