It is an Indian style Mughlai gravy with marinated chicken, mildly spiced with the flavour of mixed royal spices, the meat is braised in curd.

Ingredients of Chicken Korma

750 Gms Chicken
1.25 Tsp Salt
2 Tsp Kashmiri Red Chilli Powder
2 Tsp Coriander (Dhania) Powder
1 Cup Curd
0.25 Tsp Black Pepper
0.5 Nos Nutmeg (Jaiphal)
0.5 Nos Mace (Javitri)
1 Tbsp Ginger
1 Tbsp Garlic
5 Nos Cashew
1 Tbsp Fresh Cream
5 Nos Almond
3 Tbsp Cooking Oil
1 Nos Onion
0.5 Tsp Corn Flour
1.5 Tbsp Ghee
1 Nos Black Cardamom (Elaichi)
2 Nos Green Cardamom (Elaichi)
3 Nos Cloves
1 Inch Cinnamon Stick (Dalchini)
2 Nos Bay Leaves
1 Tsp Sugar
1 Drops Kewra Essence

How to make Chicken Korma

Step 1: Wash and make shallow slits in chicken pieces;
Step 2: Whisk the curd and keep it aside;
Step 3: In a mixing bowl, add chicken pieces, 1 tsp salt, mix it well and set aside;
Step 4: In a pan dry roast the nutmeg and mace and grind nutmeg,mace and black pepper into a coarse powder;
Step 5: Grind ginger, garlic, 0.25 tsp salt into paste and keep it aside;
Step 6: Grind cashew into a fine powder;
Step 7: Slice the onion, add corn flour and mix it well;
Step 8: Heat oil in a pan, add onions and saute it till they get golden brown in color and keep the oil aside;
Step 9: Cool the onions and then crush them;
Step 10: Heat 1 tbsp ghee in a pan, add chicken pieces and fry each side for 2-3 minutes and then set aside;
Step 11: Heat the same oil, add 0.5 tbsp ghee, black cardamom, green cardamom, cloves, cinnamon, bay leaves and saute it for a while;
Step 12: Add red chilli powder, coriander powder, sugar, prepared ginger, garlic paste, prepared pepper powder mix it well and saute it for few minutes;
Step 13: Add kewra water(add kewra essence drop in 1 tsp water), 2 tbsp curd and mix it vigorously;
Step 14: Keep adding curd in 1-2 tbsp and keep mixing it till the oil separates from spices;
Step 15: Add fried chicken pieces, mix it well , cover and cook for 20 minutes on low flame;
Step 16: Once the chicken is tender, sprinkle cashew powder, fried onion, nutmeg and mace powder and mix it well;
Step 17: Garnish it with fresh cream and almonds and serve hot.
