Corn Enchiladas Recipe is a soft maida pancakes , filled with a sweetcorn-capsicum mixture, doused in white sauce and cheese and rolled up. Then lined up , covered in a spicy tomato sauce and baked for just that hint of crisp perfection.

Ingredients of Corn Enchiladas Recipe

0.5 Cup All Purpose Flour (Maida)
1 Tsp Salt
0.75 Cup Water
4 Tbsp Butter
2 Tbsp Cooking Oil
1.5 Tsp Garlic
2 Nos Onion
0.25 Cup Green Capsicum
1.5 Tsp Red Chilli Flakes
0.5 Cup Sweet Corn
1 Cup Milk
1 Cup Tomato
4 Tbsp Spring Onion
0.5 Tsp Red Chilli Powder
1 Tbsp Sugar
0.5 Cup Mozzarella cheese

How to make Corn Enchiladas Recipe

Washing/Soaking:

Step 1: Wash all the vegetables properly;

Boiling/Cutting/Prepping:

Step 1: Finely chop the garlic, onion, capsicum and roughly chop the tomato;
Step 2: Heat water in a pan, add sweet corn and boil it for 5 minutes;
Step 3: Drain of the excess water and keep it aside;
Step 4: Heat 2 tbsp butter in a pan, add 2 tbsp maida, mix it well and cook it on low flame for few minutes;
Step 5: Add milk and constantly stir it with the whisk and cook it on low flame until it becomes little thick;
Step 6: Add salt, mix it well and keep it aside;
Step 7: Shred the cheese and keep it aside;

Preparation Of Pancakes:

Step 1: Take 0.25 cup maida in a mixing bowl, add 0.5 tsp salt, water and whisk it well;
Step 2: Grease a small pan with the butter, spread a little of the batter and then put little melted butter on top of it and cook it for 30 seconds on medium flame;
Step 3: Turn it over and cook for 30-40 seconds and then remove it on a plate;
Step 4: Repeat the process for the remaining batter;

Preparation Of Corn Filling:

Step 1: Heat 1 tbsp oil in a pan, add 0.5 tsp garlic, 0.25 cup onion and saute it on medium flame for 2 minutes;
Step 2: Add capsicum and saute it on medium flame for 2 minutes;
Step 3: Add 1 tsp chilli flakes, boiled sweet corn and saute it on medium flame for 1 minute;
Step 4: Add white sauce, mix it well and cook it on medium flame for 2 minutes and then keep it aside;

Preparation Of Tomato Sauce:

Step 1: In a blender add tomatoes, 0.25 cup onions, 1 tsp garlic and blend it to a smooth paste;
Step 2: Heat 1 tbsp oil in a pan, add spring onion and saute it on medium flame for 30 seconds;
Step 3: Add tomato onion mixture, 0.5 tsp chilli flakes, red chilli powder, sugar, 0.5 tsp salt, mix it well and cook it on medium flame for 3-4 minutes;

Assembling:

Step 1: In a baking dish, spread little bit of prepared tomato sauce;
Step 2: On 1 pan cake put little bit of corn filling in the center, cheese and wrap it from sides and place it on the baking dish above the tomato sauce;
Step 3: Repeat the process for the remaining for the remaining pancakes and place in the baking dish;
Step 4: Now spread the remaining red sauce, cheese over the pancakes
Preheat the oven and bake it on 200 degree C for 15 minutes;
