It is a delicious preparation of eggs and potato which are cooked in a gravy.

Ingredients of Egg Curry

1 Tbsp Coconut Oil
0.5 Tsp Mustard Seeds (Rai)
3 Pods Green Cardamom (Elaichi)
0.25 Tsp Black Pepper
1 Tsp Fennel Seeds (Saunf)
1 Sprigs Curry Leaves
1 Tsp Ginger
1 Tsp Garlic
1 Nos Onion
2 Nos Tomato
0.25 Tsp Turmeric Powder (Haldi)
1.5 Tsp Salt
1 Tsp Red Chilli Powder
1 Tsp Coriander (Dhania) Powder
0.25 Cup Water
2 Nos Potato (Aloo)
5 Nos Eggs
1 Cup Coconut Milk
1 Tsp Garam Masala
2 Tbsp Coriander (Dhania) Leaves

How to make Egg Curry

Step 1: Wash and chop all the vegetables;
Step 2: Boil the eggs for 10-12 minutes;
Step 3: Heat coconut oil in a pan, add mustard seeds, green cardamom, black peppercorns, fennel seeds, curry leaves, ginger, garlic and stir for 1 – 2 minutes;
Step 4: Add onions and fry till translucent or until it turns golden brown in color;
Step 5: Add tomato and saute until it turns soft and pulpy;
Step 6: Add turmeric, salt, red chili, coriander powder and mix it well;
Step 7: Add water and stir again;
Step 8: Now, add potatoes, 3 cup water and mix it again and bring it to a boil;
Step 9: Cover it with lid and cook for about 15 – 18 minutes on medium heat;
Step 10: Open the lid and give it a nice stir and add boiled eggs and mix it well;
Step 11: Now, add coconut milk and mix it well and bring it to a boil;
Step 12: Add garam masala, coriander and mix it again and cook for another 3 – 5 minutes on medium heat;
Step 13: Garnish it with coriander leaves and serve hot.
