Gehun Ki Khichdi Recipe (Wheat Kernel And Moong Dal Khichdi) is a lentil preparation made by blending wheat kernel and moong dal in pressure cooker till it is well done. The Khichdi is then given a tempering with the Indian spice.
The recipe hails from Bikaner as the name suggests which is a part of Rajasthan. It is the place where people prefer to eat wheat more than rice thus many of their dishes consists of wheat. This recipe is diabetic friendly as well as quick to make for a breakfast preparation.

1/2 Cup Whole Wheat
1/8 Cup Yellow split Moong Dal
1 tablespoon Ghee/Clarified Butter
1/2 teaspoon Jeera (Cumin Seeds)
Salt to taste
1-2 Green chilies slit
1/4 teaspoon turmeric
2 Cups water (we need 3 times the water)
Step 1: Clean, wash and soak the wheat in enough water in a deep bowl overnight. Drain well;
Step 2: Grind the wheat to a coarse paste in a mixer without using any water and then keep it aside;
Step 3: Clean, wash and soak the moong dal in enough water in a deep bowl for 2 hours. Drain and keep aside;
Step 4: Heat the ghee and oil in a pressure cooker and add the cumin seeds, green chillies and asafoetida;
Step 5: When the seeds crackle, add the ground wheat and moong dal and sauté on a medium flame for a few seconds;
Step 6: Add hot water, salt and turmeric powder, mix well and pressure cook for 6 whistles;
Step 7: Allow the steam to escape before opening the lid;
Step 8: Mix it well and serve hot.
