It is such a comfort food ,with just a large dollop of ghee cooked along with basmati rice and all the whole spices bring such a nice flavour to the food.

Ingredients of Ghee Rice

1.5 Cup Basmati Rice
3 Cup Water
3 Tbsp Ghee
0.75 Cup Onion
0.75 Tsp Ginger Paste
10 Nos Cashew
10 Nos Raisins
1 Nos Star Anise
0.5 Tsp Fennel Seeds (Saunf)
1 Nos Bay Leaves
4 Nos Cloves
2 Inch Cinnamon Stick (Dalchini)
0.5 Tsp Salt
1 Nos Green Chilli

How to make Ghee Rice

Step 1: Wash and soak the rice in water for 20 minutes;
Step 2: Slice the onions and keep it aside;
Step 3: Heat ghee in a pan, add cashew and saute it till they turn golden brown;
Step 4: Now add raisins and saute it and keep it aside;
Step 5: In the same pan saute 0.25 cup onion until it turns golden brown in color and keep it aside;
Step 6: In the same pan add bay leave, star anise, cinnamon, cardamom, cloves, fennel seeds and saute it for few minutes;
Step 7: Add 0.5 cup onion, ginger paste and cook for few minutes;
Step 8: Add rice, salt, hot water, mix it well and cover and cook until done;
Step 9: Garnish it with roasted cashew, raisins, onion and serve hot
