It is a traditional dish of the Kerala Cuisine that is made with a combination of root vegetables along with ash gourd and coconut.

Ingredients of Avial

0.5 Cup Ash gourd (Winter Melon)
1 Nos Drumstick
1 Nos Carrot
5 Nos Green Beans (French Beans)
0.5 Nos Raw Banana
1 Nos Potato (Aloo)
0.5 Cup Elephant Yam (Suran/Senai/Ratalu)
0.25 Tsp Turmeric Powder (Haldi)
0.75 Cup Grated Coconut
2 Nos Green Chilli
1 Sprigs Curry Leaves
0.5 Tsp Cumin Seeds (Jeera)
1 Tbsp Coconut Oil
0.5 Tsp Salt
0.5 Cup Water

How to make Avial

Step 1: Wash and cut all the vegetables;
Step 2: Pressure cook beans, carrot, drumstick, ash gourd,along with 0.5 tsp salt and 2 tbsp water for 1 whistles and then immediately release the pressure and transfer the vegetables into the bowl;
Step 3: Now in the same cooker add potato, raw banana, yam along with 0.25 cup water, 0.5 tsp salt, turmeric powder, and cook for 3-4 whistles;
Step 4: Mix all the vegetables;
Step 5: Now place the grated coconut, green chilies, cumin seeds into the mixer and with the help of little warm water and blend to make a smooth paste;
Step 6: Add the coconut mixture to the steamed vegetables, add coconut oil, torn curry leaves and mix it well;
Step 7: Serve hot.
