Moong and Vegetable idlis are a perfect way to have healthy breakfast to kick start our day. Since these idlis are made with moong instead of rice, they are ideal for diabetic people. moong are high in protein and are packed with vitamins and minerals. I have also added grated carrot and dill leaves to this recipe which are high in vitamin A and vitamin C.

Serve Moong Dal And Vegetable Idli along with Tomato Onion Chutney and Keerai Sambar for a healthy breakfast or you can even pack it in your lunch box.

Ingredients of Moong Dal and Vegetable Idli

1 cup Yellow Moong Dal (Split)
1/4 cup White Urad Dal (Split)
1/4 teaspoon Methi Seeds (Fenugreek Seeds)
1/2 cup Carrot (Gajjar) , grated
1/4 cup Green Bell Pepper (Capsicum) , finely chopped
1/4 cup Dill leaves , finely chopped
4 tablespoon Coriander (Dhania) Leaves , finely chopped
1/2 inch Ginger , peeled and chopped
4 Green Chillies
Salt , to taste

How to Make Moong Dal and Vegetable Idli

Step 1: In a large bowl soak moong dal in water for 2 hours;
Step 2: Drain off the water and blend to smooth paste without adding any water;
Step 3: Transfer the moong dal paste to a bowl and add curd, whisk and mix until the mixture is well combined;
Step 4: Now in a tawa heat oil and splutter mustard, cumin, chana dal, chilli, ginger, few curry leaves and cashews;
Step 5: Now add carrot and saute for a minute;
Step 6: Transfer the masala tempering to moong dal batter bowl;
Step 7: Further add hing, coriander leaves, salt and mix well;
Step 8: Just before steaming add eno (fruit saland mix well till it turns frothy);
Step 9: Pour the batter immediately into the idli plate;
Step 10: Steam the idli for 15 minutes on medium flame;
Step 11: Serve hot
