Pav bhaji is an Indian fast food / street food from Maharashtra, consisting of thick vegetable curry called as bhaji and served with a soft bread roll called pav/dinner roll.

This pav bhaji masala recipe is ultimately easy to make. All you need to do is pressure cook the veggies and saute all the goodness in butter! That’s it ! so quick and the taste is truly delicious.

Bhaji is usually made of mashed vegetables like potato, peas, cauliflower, bell pepper. Basically, you can use any vegetables to make bhaji.

Here’s how to make the best pav bhaji recipe at home on stove top in pan and in Instant Pot as well as in pressure cooker in just 45 minutes.

Ingredients of Pav Bhaji

1. Cauliflower: 3-4 small flowers
2. Cabbage: 1
3. Peas: 4 tbsp
4. Carrot: 1
5. Potato: 1 big or 2 small
6. Beetroot: 1
7. Capsicum: 1
8. Tomatoes: 4
9. Garlic: 1-2 cloves
10. Ginger: 1 inch
11. Green chillies: 1-2
12. Salt to taste
13. Kashmiri red chilli powder: 1 tbsp
14. Pav bhaji masala: 1 tbsp
15. Cooking oil: 3 spoons
16. Butter
17. Chopped raw onions to serve
18. Coriander leaves for garnishing
19. Lemon slices
20. Bread or pav to serve

How to make Pav Bhaji

Step 1: Take all veggies and wash them well;
Step 2: Cut the potato, cabbage, cauliflower, capsicum, carrot, and beetroot in small pieces;
Step 3: Add all the above cut veggies in a pressure cooker and add peas, a glass of water and salt to taste;
Step 4: Let it cook for 2-3 whistles on medium flame and then cook it on low flame for 5-7 minutes;
Step 5: After boiling these veggies, open the cooker and mash all the veggies with a masher;
Step 6: In the meantime, grind the tomatoes, green chillies, ginger and garlic;
Step 7: Take a pan, add 3 spoons of cooking oil and the above-made purée;
Step 8: Add salt to taste and 1 spoon of Kashmiri red chilli powder to it;
Step 9: Cook until it begins to leave the oil from the sides;
Step 10: Add 1 tbsp of pav bhaji masala to it;
Step 11: Add the mashed veggies to this cooked tomato purée and mix well;
Step 12: Serve pav bhaji in a bowl, garnish it with coriander leaves and top it with butter;
Step 13:  Serve with chopped onion, a lemon slice and bread/ pav, whichever you like;

Pressure Cook The Veggies:
Step 1: To a pressure cooker, add peeled potato and cauliflower florets.

To Make Pav Bhaji:

Step 1: Heat up butter in wide saute pan

Step 2: Add pav bhaji masala and chilli powder and saute for few seconds.

Step 3: Add finely chopped onions saute for 5 mins, until the onions are lightly browned.

Step 4: Add ginger garlic paste, saute for 2 to 3 mins.

Step 5: Add finely chopped tomatoes, salt and keep sauting until the tomatoes are nice and soft

Step 7: Now, mash the onion and tomato masala using masher

Step 8: Add cooked veggies, keep saluting for few mins. Add 1/2 cup of water and cook for few more minutes until the bhaji are well combined.

How To Fry The Pav Buns?

Step 1: First, slit the paav (soft bread rolls or buns). Then, heat the tawa or a pan and melt butter on it.
