It is a classic South Indian dish. The addition is simple spices like ginger and curry leaves,brings out the flavors of the steamed rava idli.

Ingredients of Rava Idli

1 Cup Semolina (Bombay Rava / Sooji)
1 Cup Curd
0.5 Tsp Salt
1 Nos Carrot
0.5 Tsp Eno Fruit Salt
1 Tsp Cooking Oil
0.5 Tsp Mustard Seeds (Rai)
0.5 Tsp Split White Urad Dal
0.25 Tsp Asafoetida (Hing)
2 Nos Green Chilli
1 Inch Ginger
1 Sprigs Curry Leaves
1 Tbsp Cashew
0.25 Cup Water

How to make Rava Idli

Step 1: Wash and grate the carrot;
Step 2: Heat oil in a pan, add mustard seeds and allow it to crackle;
Step 3: Add the torn curry leaves, grated ginger, green chilies and cashew nuts and roast them for a few minutes;
Step 4: Add the rava and roast until you get a good aroma and set aside to cool;
Step 5: In a mixing bowl combine the roasted rava idli mixture along with the curd, grated carrot, eno fruit salt, salt and keep aside to rest for 5 minutes;
Step 6: Add a little water as the rava idli batter would have soaked up all the moisture;
Step 7: Add the grated carrots and eno fruit salt and whisk the rava idli batter;
Step 8: If the batter is too thick add water to make a thick batter of dropping consistency. Stir well for a couple of minutes;
Step 9: Preheat an idli steamer with enough water and keep it ready;
Step 10: Grease the idli mould with oil and spoon the idli mixture into the cavities;
Step 11: Place it in a preheated steamer and steam for 10 minutes until done;
Step 12: Serve hot.
