It is a Konkani style raw mango curry. Its tangy, spicy, little sweetish with a hint of bitterness acquired from methi seeds in it.

Ingredients of Raw Mango Curry

4 Nos Raw Mango
2 Tbsp Cooking Oil
1 Tsp Mustard Seeds (Rai)
1 Tsp Cumin Seeds (Jeera)
1 Sprigs Curry Leaves
4 Nos Green Cardamom (Elaichi)
1 Inch Cinnamon Stick (Dalchini)
1 Nos Onion
1 Tsp Turmeric Powder (Haldi)
1 Tsp Red Chilli Powder
1 Tsp Ginger Garlic Paste
0.5 Cup Grated Coconut
1 Tbsp Coriander (Dhania) Seeds
2 Nos Dry Kashmiri Red Chilli (Whole)
1 Tsp Brown Sugar
0.5 Tsp Salt
1 Tsp Curry powder
0.5 Cup Water

How to make Raw Mango Curry

Step 1: Peel the raw mango and cut them into wedges;
Step 2: Dry roast the coriander seeds on pan and keep it aside;
Step 3: Heat oil in a non-stick pan, add mustard seeds and cumin seeds and let them splutter;
Step 4: Add curry leaves, green cardamoms and cinnamon and mix it well;
Step 5: Add onion and saute till golden;
Step 6: Add turmeric powder, red chili powder, curry powder and mix well;
Step 7: Add ginger-garlic paste and saute till the raw aroma is gone;
Step 8: Add raw mango and mix;
Step 9: Add water, reduce heat and cook on medium heat for 3-4 minutes;
Step 10: Put coconut, roasted coriander seeds and red chilies in a mixer jar and grind to a smooth paste with a little water;
Step 11: Add ground paste to the curry and mix well;
Step 12: Add brown sugar and salt and mix well and continue cooking for a minute;
Step 13: Transfer into a serving bowl and serve hot.
