Roast Chicken and Vegetables is a classic family favorite recipe. We roast chicken in the oven over a bed of vegetables (carrots, onions, and potatoes) for an entire meal in one dish. I use my famous chicken seasoning and roast until the skin is crispy and the chicken is juicy. We love serving it alongside some dinner rolls for the perfect meal!

Ingredients of Roasted Chicken with Vegetables

4 Piece Chicken
2 Tbsp Butter
1 Tbsp Olive Oil
1 Tsp Salt
1 Tsp Black Pepper Powder
1 Tsp Paprika
4 Piece Potato (Aloo)
1 Piece Carrot
1 Piece Onion
4 Cloves Garlic
0.5 Tbsp Honey
0.25 Tbsp Tomato Ketchup
0.25 Tbsp Soy Sauce

How to Make Roasted Chicken with Vegetables

Step 1: Heat a large cast iron skillet over medium high, add butter and olive oil;
Step 2: Pat dry chicken with paper towel and season with salt, pepper, and paprika to taste;
Step 3: Place chicken skin side down in the hot skillet, and cook just until brown;
Step 4: Flip chicken and brown on the other side. Do not cook all the way through. Remove from pan and set aside;
Step 5: In the same skillet, add carrots and potatoes;
Step 6: Season them with salt and pepper;
Step 7: Cook over high heat until they develop some color. About 8 minutes;
Step 8: Once slightly golden but NOT cooked through, remove from the pan and set aside;
Step 9: In the same pan, add onion, and more olive oil if needed and saute onion until translucent;
Step 10: While onion is cooking, make the sauce. Whisk to combine soy sauce, honey, ketchup in a small bowl. Set aside;
Step 11: Add garlic to onion and cook 1 minute;
Step 12: Add sauce and bring to a simmer to reduce slightly. About 5 minutes;
Step 13: Add carrots and potatoes to the skillet and toss in the sauce.
Nestle in chicken pieces;
Step 14: Finish cooking in a 425°F oven for about 15-20 minutes;
Step 15: Serve hot.
