Semiya Kheer/ Payasam is a simple, yet delicious festive pudding made of vermicelli , milk, dry fruits and flavored with cardamom and/or saffron. Usually a staple on occasions like Tamizh/Tamil new year and Onam where a feast is cooked, and this payasam is served as dessert.

You can use any kind of Semiya (Vermicelli) to make the Semiya payasam. They can be roasted or not roasted. Now a days roasted semiya is available in the market. In case if you do not get roasted semiya then roast the semiya in a preheated pan and then add the roasted semiya to the milk.

This Semiya Payasam/ Kheer yet another simple and quick recipe that has surprisingly wonderful results. Make it for the next festival and for your family and friends after a festive meal together.

Ingredients of Semiya Kheer/ Payasam

1 LitreMilk
0.5 Cup Vermicelli / Semiya
2 Tsp Ghee
1 Tbsp Almond
1 Tbsp Cashew
1 Tsp Raisins
0.75 Cup Sugar
1 Tsp Green Cardamom (Elaichi) Powder

How to make Semiya Kheer/ Payasam

Step 1: Take a vessel, add milk into it and bring it to a boil;
Step 2: Reduce the flame and keep the milk boiling for few minutes;
Step 3: Switch off the flame and place it aside for later use;
Step 4: Heat 1tsp ghee in a panon low flame;
Step 5: Add chopped dry fruits – almonds, cashew and raisins and saute them for 1-2 minute on low flame and then keep it aside on a plate;
Step 6: Into the same wok/sauce pan, add 1 tsp ghee;
Step 7: Add vermicelli and roast them for few minutes on low flame until a slight brown color is observed and keep stirring while roasting;
Step 8: Add the boiled milk carefully and mix well;
Cook till it starts to boil;
Step 9: Add sugar, mix and cook for a minute;
Step 10: Add elaichi powder, fried dry fruits and mix well;
Step 11: Cook until a thick consistency is observed;
Step 12: Serve hot or cold as per your taste.
