Tacos shells are filled with layers of rajma cooked in a spicy tomato sauce, salsa of finely chopped vegetables and topped with cheese for a great bite sized Mexican snack .

Ingredients of Tacos Recipe

10 Nos Taco Shells
1 Tbsp Cooking Oil
0.5 Cup Onion
0.5 Tsp Garlic Paste
1 Cup Tomato Puree
4 Tbsp Tomato Ketchup
0.5 Tsp Red Chilli Powder
1 Tsp Cumin Powder
1 Tsp Salt
0.75 Cup Rajma
2 Nos Tomato
0.25 Cup Spring Onion
1 Nos Green Chilli
0.5 Tsp Red Chilli Flakes
0.5 Tsp Oregano
1 Sprigs Coriander (Dhania) Leaves
0.5 Tsp Sugar
2 Tbsp Chilli Sauce
0.5 Cup Lettuce
5 Tbsp Mozzarella cheese

How to make Tacos Recipe

Washing/Soaking

Step 1: Wash and soak the rajma in water for 8-10 hours;
Step 2: Wash allthe vegetables;

Boiling/Cutting/Prepping

Step 1: Finely chop the onion, tomato, spring onion, green chilli and shred the lettuce leaves;
Step 2: Grate the cheese and keep it aside;
Step 3: Heat water in a cooker and add rajma and pressure cook on medium flame for 8-10 whistles;
Step 4: Drain off the excess water and keep it aside;

Preparation Of Filling

Step 1: Heat oil in a pan, add chopped onions, garlic paste and saute it on medium flame for around 1 -2 minutes;
Step 2: Add tomato puree, 2 tbsp tomato ketchup, red chilli powder, cumin powder, 0.5 tsp salt, mix all this well and allow the mixture to mix around 2 minutes;
Step 3: Add boiled rajma, mix it well and allow the mixture to cook for 2-3 minutes;
Step 4: Use the masher and mash the rajma little bit;
Step 5: Cook till the moisture dries up;
Step 6: Switch off the flame and keep it aside;

Preparation Of Salsa

Step 1: In a mixing bowl, add tomato, spring onion, green chilli, red chilli flakes, oregano, coriander, sugar, 0.5 tsp salt and mix it well;
Step 2: Mash them a little bit with the back of the spoon to get the perfect consistency;

Assembling

Step 1: In 1 taco shell fill 1 tbsp rajma topping, 0.5 tbsp salsa, little ketchup, 0.25 tsp chilli sauce over it, lettuce leaves and shredded cheese;
Step 2: Repeat the process for the remaining tacos and mixture;
