The julienned vegetables stir fried on high heat are mixed with cooked rice and flavored with spices to make the veg fried rice.

Ingredients of Veg Fried Rice

1 Cup Basmati Rice
0.5 Nos Onion
1 Nos Tomato
0.25 Nos Green Capsicum
1 Tbsp Cooking Oil
0.5 Tsp Cumin Seeds (Jeera)
1 Inch Ginger
2 Nos Green Chilli
0.5 Tsp Salt
0.5 Tsp Red Chilli Powder
0.25 Tsp Turmeric Powder (Haldi)
1 Tbsp Coriander (Dhania) Leaves
1 Tbsp Roasted Peanuts (Moongphali)
0.5 Nos Lemon
2 Cup Water

How to make Veg Fried Rice

Step 1: Wash and soak te rice in water for 30 minutes;
Step 2: Wash all the vegetables and cut them into small pieces;
Step 3: Add 2 cup of water and rice in a cooker and cook the rice;
Step 4: Heat up oil in a pan;
Step 5: Add cumin and grated ginger along with sliced onion;
Step 6: Saute the onion till they turn light brown in colour;
Step 7: Add finely chopped capsicum and green chili;
Step 8: Add in salt, red chilli powder and turmeric powder;
Step 9: Mix everything well and add finely chopped tomatoes and capsicum;
Step 10: Now add 4-5 Tbsp of water and cook the masala till tomatoes are soft and pulpy;
Step 11: Add in fresh lemon juice;
Step 12: Now add cooked rice to the mix and mix everything well;
Step 13: Add in roasted peanuts and chopped coriander;
Step 14: Mix well and serve.
