It is a rice cake made with coconut milk with a dash of cumin and jaggery syrup to enhance the authentic taste and flavor.

Ingredients of Vishu Katta

0.25 Cup Rice
1.5 Piece Jaggery
0.5 Piece Coconut
0.5 Tsp Cumin Seeds (Jeera)
0.5 Tbsp Ghee
0.5 Tsp Green Cardamom (Elaichi) Powder
0.5 Tsp Ginger Powder
2.5 Cup Water

How to make Vishu Katta

Step 1: Soak rice in water for 45 minutes;
Step 2: Soak jaggery in warm water untill it gets dessolves;
Step 3: Now grate coconut and without adding any water, blend the grated coconut and extract the coconut milk out of it which is our “onnampaal” or the first extract, and keep it aside;
Step 4: Now add 0.25 cup of warm water and blend it again, extract milk out of it now to get the “rendampaal” or the second extract;
Step 5: Now again add 0.25 cup of water and blend it, extract now to get the “Moonampaal” or the third extract;
Step 6: Now filter the soaked rice, discard the water and put it in the vessel on the stove along with the third extract and mix it well;
Step 7: Now cook it untill all the coconut milk is absorbed and then add the second extract;
Step 8: Let it cook on medium flame until all the coconut milk is absorbed;
Step 9: Now, pour in the first extract and let it cook in medium flame until rice is done;
Step 10: Stir until thick and it should leave the sides of pan while stirring;
Step 11: Now grease the pan/mold with ghee and pour in the soaked rice and smooth it;
Step 12: Now dry roast the cumin seeds on tava and then sprinkle them on the rice;
Step 13: Now let it cool down completely and then cut them into small pieces;
Step 14: Now take the melted jaggery and heat it until it gets thick;
Step 15: Now add cardamom powder in the melted jaggery and mix it well;
Step 16: Now pour this jaggery syrup on rice batter and serve
